If you have doubt, just smoke it a little longer.  Last one I did I put it on at 8 pm and took it off at 11 am.  About 3 hours before pulling it off i unwrapped the aluminum foil to give it a nice charred outside.  Meat had great texture, it's my seasoning I can't get right on these things.

I'm putting mine on around 10 pm and I haven't decided if I'm even going to wrap it in foil.  I've read a lot of recipes/ how tos on it, and it seems like only about 1/2 of the people wrap them at all.
