One of our favorites.

Try grilled zuchinni. Slice the zuchinni lengthways and scoop out the seeds. Just enough to make a bowl effect. Brush with olive oil and sprinkle with your favorite spice or rub. Grill flesh side down until just tender. Flip over and fill bowl with cheese and cook another minute or two. I had this first at a mexican restaurant and they use chili powder and cumin and top with white cheese. I've used everything from italian seasoning and mozzarella to cajun seasoning and pepper jack.

Medium sized zuchinni seem to work best.

I grill both zuchinni and squash.  I slice them long ways and soak them in melted butter and minced garlic before grilling them.  Tis the bomb with some correctly cooked steaks.
